Born in San Gavino Monreale, he began his professional training at the hotel management school in Alghero. From here a long journey brings Roberto in some of the best restaurants in Europe. In 1999 he opens his first restaurant, S'Apposentu, in his home town and in 2002 he moves it to the Teatro Lirico in Cagliari, where he receives a Michelin star. In 2010 he creates the Academy of Sardinian cuisine Sa Scolla (Accademia di Alta Cucina Sarda Sa Scolla)in the small town of Siddi, in the heart of Marmilla, where he experimented with a formula that puts the restaurant in the center of a network that involves farmers, ranchers and artisans.
